Ham'n'cheese calzones (and breadsticks)

Ham and cheese calzones:
1 can refrigerated pizza crust
1 pkg ham lunchmeat
1 C. shredded colby jack cheese
1/4 C. ranch dressing
(optional tomato slices)

Heat oven to 400. Unroll pizza dough on lightly floured surface. Pat out dough to form 16x12 rectangle. Cut into quarters. Top each quarter with ham and cheese mix. Fold each rectangle in half and seal with a fork. Poke some holes in the top with the fork. Bake on greased cookie sheet for 16-18 minutes

The only difference is I made a batch of bread dough in the bread machine and used it instead of her recipe. But the steps to follow after that are the same. And the cinnamon breadsticks she mentions are really, really good.

Carnitas and Pizza boat

First I gotta say, Mandi, no holding out on us!! We need your recipes! That pulled pork.....mmmmmmmmmmmm.

Here are the recipes for the carnitas and pizza boat I made:

Carnitas:
3-4 lbs pork roast, blade or shoulder
1 jar La Victoria salsa verde

Cook in the crocpot all day until you can pull it apart with forks. I usually top with Monterrey jack cheese

Pizza boats:
1 loaf french bread
1/2 onion
1/2 green pepper
1 pkg pepperoni
1 C. mayonnaise
2 C. mozarella cheese
2 C. cheddar cheese

Mix all the ingredients together then spread it over bread. Cook at 350 for 20 minutes or so.

German Pancakes

Really easy and fast to make. I usually cook it in a cast iron pan, but a glass pan is fine.

Melt one cube butter in 9x13 pan at 400.

Blend together
6 eggs

Add
1c milk
1/2c sugar
1c flour
1 teasp vanilla
1/2 teasp salt

Pour over butter, bake at 400 for 15-20 minutes.

Sweet 'n' Sour Meatballs

Make and thoroughly cook about 20 meatballs and set aside (or buy a pack for around $2 at Winco!)

Sauce:
1/2 C. brown sugar
1 Tbs cornstarch
1 can pineapple chunks and juice
1/4 C. vinegar
1 Tbs soy sauce

Mix brown sugar and cornstarch together. Add all other ingredients and bring to a boil. Add meatballs and simmer for 20 minutes. Can add 1/2 red pepper slices if desired. Serve over rice or noodles.

Mandy--where are you? We need your recipe for that delicious pulled pork! AND I'm so proud that a member of our mealswap was the Victorious winner of the chili bake off!!! Yeah Mandy! Can't wait to have that again!
