Chicken Cordon Bleu

I made a couple changes to this recipe  http://ohsodelicioso.com/chicken-cordon-bleu/
First- I use mozzarella and cheddar.   Cheeses I have on hand.  Second, I sautee a little onion and garlic and mix it with the cheese before putting in the chicken.  Delicious and easy!

Hot Diggity Good (o.k., it's really called white chili)

I don't have a picture of this.  Because everyone eats it allll gone before I get a chance.  It's that good.  Seriously good.  It won a prize at our ward chili contest-- and these people know how to cook.  So I present to you (Merry Christmas) White Chili.**Recipe from Jenny Winks, favorite wife of my favorite cousin.  Thanks Jenny!**

White Chili

Sautee together:
1 lb cooked chicken
1 onion, chopped
1 1/2 tsp. garlic powder (it sounds like a LOT- it is- but it's key in what makes the recipe so yummy.  So don't skimp!)
1 tsp oil

In a large pot combine:
the sauteed mixture above
2 16 oz cans of white beans (drained)
3 1/2 C. chicken broth
4 oz can diced green chilis
1 tsp salt 1/2 tsp. pepper
1 tsp cumin
1 tsp oregano

Boil 30 minutes uncovered stirring VERY FREQUENTLY
Remove from heat.  Add 1 C. sour cream, 1/2 C. whipping cream.
This makes a pretty small pot of chili.  I usually double it for our family.

No bake cookies

Whoa its been 9 months since anyone posted, gez, whats up with our cooking. Ok I am just posting the ingredients for this recipe because I can never ever find this recipe and then i have to spend an hour on the phone trying to get it. So really this post it just for me, so I have somewhere to find it fast.
There is so many different recipes for these cookies, but I like this one the best.
2 c sugar
3/4c butter
1/2 c milk
2 1/2 T cocoa
3c oatmeal
3/4c p butter
1t vanilla

Sweet and Savory Flank steak

This was so good. I got it off of the blog, our best bites. Yummy with some baked potato's and then we had gingerbread cake for desert.


Sweet and Savory Flank Steak

1/2 C brown sugar
1/2 C olive oil
1/2 C soy sauce

1 C pineapple juice
1 T freshly grated ginger
4-5 garlic cloves, finely minced

up to 2 lbs flank steak


Combine first 6 ingredients for the marinade. Whisk together until combined. Remove 1/4 cup and set aside.

Score flank steak with a knife diagonally on both sides. This just m
eans to run a sharp knife through it in the pattern below. You don't want to actually cut through the steak, just lightly score- like 1/8 inch- into it. This will help tenderize the meat.
Place steak in large ziploc bag and pour marinade (excluding the 1/4 C you set aside) over it. Refrigerate 8 hours or overnight. Take out of fridge 30 minutes before grilling. Place steak on grill and cook for 5-10 minutes per side, depending on the size. Use the 1/4 C marinade you set aside to brush over steak in the last few minutes of grilling. (That's a little trick I use for pretty much any meat that has a marinade just to splash it with an extra punch of flavor at the end) Flank steak should still be pink in the middle when done.

Remove from grill and let stand for 5 minutes before cutting so the juices can redistribute. Always cut flank steak against the grain, in thin slices to serve. (If you're not sure what it means to cut against the grain, check out the flank steak post)

*If you don't have a grill, the other way to cook a flank steak is under the broiler (please don't anyone just pop it in a frying pan. Not good.) Place on a broiler pan on the upper rack and broil for about 5-10 minutes per side depending on the size. Because this particular marinade has sugar in it, you'll want to watch carefully so it doesn't burn. If you see the sugar burning too much, then you might want to move your rack down.

Bacon Ranch potato salad

This potato salad is my absolute favorite. Try it out!
2.5 lbs potatoes
1 lb shredded cheddar cheese
1 lb crumbled bacon
1 C. ranch dressing

Boil the whole unpeeled potatoes for about 20 minutes. Then, while hot, lightly score the circumfrence of a potato with a sharp knife,and drop it in a bowl of ice water. Stir around for about 10 second and pull them out. The peel comes off so easily using this method! Do one potato at a time though, so they don't get cold waiting for you to take off the skins.
Next, dice the potatoes and cover them with cheese. Stir and cover with foil for a few minutes to let the cheese will melt all over the potatoes.
Then stir in the bacon and ranch. Let sit in the fridge for about an hour, or as long as it takes or it to get cold.

You can double, triple, quadruple this recipe. And you're going to want to. You'll be eating this thing for breakfast, lunch, and dinner. (I would assume. Of course I wouldn't know from personal experience....er,....)

Cafe Rio sweet pork

Sweet Pork
Ingredients:
2 pounds pork (I used boneless pork ribs)
3 cans Coke (NOT diet), buying the 2 ltr. is cheaper
1/4 cup brown sugar
dash garlic salt
1/4 cup water
1 can sliced green chilies
3/4 can enchilada sauce (I use Old El Paso brand, mild spiciness but any will work)
1+ cup brown sugar

Directions:
1. Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight. (I did mine overnight)
2. Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on low for 6- 8 hours.
3. Remove pork from crock pot and drain any liquid left in the pot. Shred pork. (for those of you who have a Bosch mixer, place meat in mixer with wire whisks and mix on speed 1 for 15-20 seconds, it will be perfectly shredded!)
4. In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.
5. Put shredded pork and sauce in crockpot and cook on low for 2 hours.

Cilantro-Lime Rice
Ingredients:
1 c. uncooked rice (long-grain, white rice)
1 tsp. butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 can (15 oz) chicken broth
1 cup water
1 Tbsp. freshly squeezed lime juice
2 tsp. sugar
3 Tbsp. fresh chopped cilantro


Directions:
In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice

Cilantro Ranch Dressing
Ingredients:
1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
1 c. mayonnaise
1 c. buttermilk
1/2 bunch of fresh cilantro
1 clove garlic
juice of 1 lime
1 jalapeno (I left this out, I don't like it too spicy)

Mix all ingredients together in the blender. That's it!

Stromboli


I can't believe I haven't posted about stromboli yet. I make it so often I just assumed I had posted this recipe:


Stromboli

Bread dough- I throw a batch in my bread machine a few hours before it's time to make dinner, but I think the original recipe called for a frozen loaf from the store and allow it to sit out until it's thawed.

1/2 lb thin sliced hard salami

1/2 lb thin sliced deli ham

1/2 lb thin sliced mozarella cheese

1/2 lb thin sliced cheddar cheese

*1 onion thinly sliced

*1 green pepper thinly sliced


Roll out the bread dough to form two rectangles about 10x 18 inches. Cover half of each rectangle (the long way) with half of the salami, half of the ham and half of each cheese.

*The original recipe called to sautee the onion and green pepper together, then put it on top of your meat and cheese. I have learned to leave the onions and peppers out since we're cooking for kids. It's great either way.

Next, fold the bread closed over the top of your meats and cheese and seal it by pinching around the edges. Beat one egg and brush the top of dough with egg, then sprinkle with garlic powder and italian seasoning.

This recipe makes two strombolis. Place them on a greased cookie sheet and bake at 400 for 15-20 minutes.

Black bean and corn salsa

This is so good! And it's made of VEGETABLES! ???
Yes. Somehow, that's possible.

Blackbean and Corn Salsa:

1 can black beans drained and rinsed
1 pkg frozen sweet corn, thawed
3 roma tomatoes chopped
cilantro- chopped to taste
a few slices of red onion chopped
1 avocado chopped
2 Tbs vinegar
lime juice

Bran Muffin Mix

Yeah. Bran muffins. Sounds gross (at least, it did to me) but they're good! And the cool thing about this recipe is that it makes a ton and you store it in the fridge for up to six weeks. So you just make a few muffins whenever you want.

5 C. flour
5 C. All Bran cereal
1 C. oil
4 beaten eggs
2 C. sugar
1 Tbs. salt
5 tsp. baking soda dissolved in 2 C. boiling water
1 qt. buttermilk

Mix all ingredients in a large bowl. Place in closed container and can store up to 6 weeks. Bake at 400* for 15-20 minutes.

Danette's secret soup

Don't share this recipe. :) J/k. I got it from someone else and changed a thing or two, so now its mine.

1 1/2 lb shredded chicken
1 bunch cilantro, chopped
1 onion chopped
1 14 oz stewed tomatos, i usually blend it up or use tomato sauce
1 14oz green enchilada sauce
1 4oz green chilies
2 c water
14 oz chicken broth, I usually use the broth from the chicken
1 teasp cumin
1 teasp chili powder
1 teasp salt
1/2 teasp pepper
1 bay leaf
1 can corn
1 minced garlic

throw it all in the crockpot and cook

Pumpkin bread

3 C. Sugar
4 eggs
1 C. oil
2/3 C. water
3 1/2 C. flour
1 tsp nutmeg
1 tsp cinnamon
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp salt
2 C. pumpkin
1 4-serving pkg pudding (just put the powder in dry) I used pumpkin spice pudding
1 pkg chocolate chips

Cream eggs and sugar, add oil, water an dmix well. Mix all dry ingredients together (except pudding) and add to liquid mixture. Add pumpkin and pudding and mix batter well. Bake at 325 for 1 hour and 15 minutes.

Link and Spaghetti Sauce for wimps!

My Spaghetti Sauce last week was just two cans of Hunts Spaghetti Sauce and a can of chunky tomatoes. I think the two I mixed were Garlic and Herb and Roasted Garlic and Onion. Sorry if you all didn't have enough noodles I ran out. I used to make Spaghetti Sauce from Scratch but it is time consuming and Hunts taste pretty good! One day I will make it from Scratch for everyone!

Meeeeeee again......

Here's another recipe for my adoring fans:

Zesty Italian Chicken

1 can cream of chicken soup
1 pkg dry italian dressing powder
1 pkg .of cream cheese
3-4 C. chicken breast, diced

You can dump everything into the crocpot -even leaving the chicken raw- and let it sit on high for about 3 hours. OR you could cook up the chicken and throw everything together and let it warm and mix together. That's what I did. Because I sorta forgot I was making dinner that night.

On Rice:
I'm sure you can figure the rice part out. I am a rice failure. There's a reason I was born on this continent. It's because I STINK at making rice. Now, a good carmel apple pie on the other hand.....

And Brooke, your spaghetti was good. What did you do for the sauce? Yumm

Spaghetti sauce from tomatoes

Since I have TONS of tomatoes growing in the garden this year and I boycotted canning when I was about 8... I've been making and freezing yummy spaghetti sauce. This can actually be used for tons of other foods I'm sure. Anything that calls for tomato sauce.

I probably use about 15 tomatoes per batch. Dip them in boiling water for 1-2 minutes then immediately move them to cold water. While they're cooling down, sautee an onion and about 4 cloves of garlic in butter. Once they turn golden-y, put them in the croc pot. When the tomatoes are cool, peel the skins off, take out the core and cut them in quarters. Add them to the onions and garlic in the crocpot and cook on low for 12-24 hours. Let it cool down in the fridge, then throw them in freezer bags.

I've been looking for a good spaghetti sauce for a long time and this is finally one I like. When I'm ready to serve it over noodles I usually add a little italian seasoning. Voila!!

Homemade Granola bars

So if it says homemade it must be mega-healthy. That's my motto. It even applies to chocolate mousse, ice cream and alfredo. No matter what, if it's made at home it's full of health. Mmm.

Granola Bars:
4 C. quick cooking oats
1 C. brown sugar
1/2 C. honey (or corn syrup)
1 tsp. salt
1 1/2 C. melted butter
1 tsp. vanilla
chocolate chips, raising, white chocolate chips (this is supposed to be "optional" but who are we kidding. Why else do we really eat granola bars?!)sesame seeds, sunflower seeds etc. to add flavor. Mix all together, press into greased 9.13 pan. Bake 10-12 minutes in 400 degree oven (I always have to cook more like 20 minutes)
Cool and cut into bars

Banana Bars

½ cup butter, softened
1 ½ cups white sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
1 cup mashed ripe bananas (I used three ripe bananas)
Frosting (use store-bought cream cheese frosting or make your own from the version below)

Preheat the oven to 350 degrees. Grease a 10 x 15 inch jellyroll pan or one 9X13 pan and an additional 8X8 pan. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt in a medium bowl; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan(s). Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting.

Whipped Cream Cheese Frosting
1 (8 oz) package cream cheese, softened to room temperature
1 cup white sugar (you can use either granulated sugar or confectioners' sugar - the confectioners' sugar tends to dissolve better and not be as grainy but either one works fine)
1/8 tsp salt
1 tsp vanilla
1 ½ cups heavy whipping cream

In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside. In another medium bowl, beat whipped cream until stiff peaks form (it helps to use a chilled bowl and chilled beaters). Fold whipped cream into cream cheese mixture. Frost to your heart's delight!
